Easy & healthy recipes!

You come home late and try to prepare a healthy delicious meal that’s quick and easy. Grab a box of fiber and protein enriched pasta in red lentil, chickpea, yellow lentil, or black bean flavors. It’s totally gluten-free, Non-GMO, and vegan friendly.¬†And better yet¬†Pasta Lensi is made in Italy. Manja, Manja!

First, boil a pot of water and add salt. Once the water is boiled, add your box of pasta and cook until “al dente” or just right. (Directions included on the box)


Next, heat extra virgin olive oil in a pan and add diced garlic to the dish. Sautee until garlic is slightly brown. Dice tomatoes into small pieces and add them in. Mix together, add oregano, italian seasoning, salt, and pepper for extra flavor.


Add whichever toppings you prefer. Enjoy!

Every morning, I gear up for my day with a smoothie and a positive outlook. I find that a lighter yet a nutritious breakfast helps me to stay energized throughout my entire day. I made my morning pick-me-up unsweetened almond milk smoothie with blueberries and Artisana Organics Raw Cashew Nut Butter.

Get your protein fill!

Black bean burgers are loaded with protein and fresh veggies like carrots and onions. Get seasoning with cayenne pepper, chili powder, pepper and salt, turmeric, and cumin to spice up the flavor. You’ll need 1 onion, 2 cans of black beans, 2 shredded carrots, 3 garlic cloves, quick oats and soy sauce.

Start off shredding carrots or buy already shredded carrots (much easier and saves you time in the kitchen) and chop onions into small pieces. Chop garlic cloves too!blackbeanburger.JPG

Heat a pan and add a little olive oil to cook the onions, carrots, and garlic in until sauteed. Don’t forget to add some salt and pepper for added flavor. While that’s cooking start mashing your black beans.


Once the onion, carrots, and garlic is cooked add it to your bowl of mashed black beans, and add 1/2 cup of quick oats, and tablespoon of soy sauce. Mix thoroughly then form into  burgers.


Let them freeze for 30 minutes and then take them out to cook whenever you want. Just oil a pan and cook them.

Cooking with quinoa

Many people have a false impression of quinoa. They think “eww that doesn’t taste good at all” – surprise surprise it’s actually quite delicious and nutritious. You have to flavor it up with seasonings like garlic, Himalayan sea salt, pepper, oregano, and bam you have a hearty meal.

Slice 1-2 tomatoes into small finely chopped pieces. Use 1-2 garlic cloves and chop into tiny chunks.¬†Grab a can of kidney beans drain and rinse. You can add black olives or any other olive of choice to the dish, but make sure you cut them in half. Saute in Botticelli’s¬†extra virgin olive oil until fully seasoned with sea salt, pepper, oregano, garlic and keep mixing to make sure everything gets the proper flavoring.

Add 1 cup of uncooked quinoa to boiling water.¬†Let it cook for about 18 minutes until you see them puff up and become similar to a rice substance. Now, you know it’s ready. Drain the rest of the water left in the pot and add the quiona to your sauteed mixture of goodness.

Serve hot or cold and enjoy!






New Year, New Vegan!

Happy New Year!¬†I still can’t believe its 2014. It’s the first time in 19 years where there was a new moon in the new year which means a lot of significant changes in careers, relationships, etc. For the past 13 years, I’ve been a vegetarian but after researching more about the additives, treatment of animals, animal fat, and “extra” stuff they add into the foods I decided to go completely vegan.

Bring on the vegan challenge. I’ll update you along my journey.
